French onion soup recipe

This classic French dish makes a warming bowl of rich onion soup laced with garlic and white wine. Topped with toasted baguette covered in melted cheese, it's a taste sensation.

Ingredients

  • 1.5kg brown onions

  • 6 tbsp butter

  • 2 tbsp vegetable oil

  • 3 cloves garlic

    crushed

  • 1 tbsp sugar

  • ½ cup plain flour

  • 8 cups beef stock

  • 2 tsp thyme

  • 3 bay leaves

  • ½ tsp pepper

  • 1 cup dry white wine

  • 1 French loaf

    sliced

  • 1 cup gruyere cheese

    grated

Equipment

  • 1 saucepan
  • 1 oven proof bowls
  • 1 grill

Instructions

  1. Heat oil and butter in a saucepan until hot and add onions. Stirring every 2 minutes until they are collapsed.
  2. Add garlic and sugar and keep stirring for 5 minutes more until caramelised.
  3. Sprinkle flour over and stir to brown and make a roux.
  4. Gradually add beef stock to thicken and add thyme, pepper and bay leaves.
  5. Stir in wine and simmer for 5 minutes.
  6. Ladle into oven proof bowls and place on top a slice of French bread topped with grated cheese. Grill for 5 minutes or until cheese is golden and melted.
  7. Sprinkle with some chopped parsley and serve.

Notes

Tip
This is a great standby dish but it is fancy enough for a dinner party too.
Variation
You can substitute any cheese you like on the top of the bread.
