- 2 cups balsamic vinegar
- ½ cup brown sugar
- ¼ cup maple syrup
In a small saucepan, place all the ingredients and whisk together. Bring to the boil and simmer until you have reduced the liquid by half. Store in the refrigerator.
- If you are a purist and have plenty of time, use just the balsamic vinegar and reduce it by two-thirds. Adding sugar and maple syrup is just a way of hurrying up the caramelisation process.
- Near the end of the reduction process, you’ll need to be careful it doesn’t burn.
