Sweetcorn hash

Sweetcorn hash is an easy recipe full of the flavours of corn, bacon, onion and garlic that goes equally well with barbecued meat or with an omelette.

Ingredients

  • 2 corn

    kernels sliced off

  • 2 bacon

    finely diced

  • 2 cloves garlic

    minced

  • 1 Spanish onion

    finely diced

  • 1 cup spinach or rocket

  • as needed Dot’s Canola Oil Cooking Spray

Equipment

  • 1 Knife
  • 1 Pot
  • 1 Colander
  • 1 Frying pan
  • 1 Wooden spoon or spatula

Instructions

  1. Slice the kernels off the corn and cook in salted water for 10 minutes. Drain and set aside.
  2. Spray frying pan with Dot’s Canola Oil Cooking Spray and gently heat. When hot add the bacon, onion and garlic. Stir for five minutes or until the bacon browns slightly and the onion becomes translucent.
  3. Add the cooked corn and spinach/rocket leaves. Continue to stir until the leaves have wilted slightly. Season to taste and serve immediately.

Notes

Tip
Check seasoning before adding salt as bacon is naturally salty.
Tip
Hold cooking spray can upright and spray unheated cookware.
Variation
Pairs well with lamb chops or cheese omelettes.
Storage
Best served immediately while leaves are freshly wilted.
