Ingredients
4 crepes
warmed
1 tsp butter
2 cups broccoli
finely chopped
300g sour cream
½ red onion
sliced
100g smoked salmon
2 tbsp capers
rinsed

- 1 frying pan
Instructions
- Heat the butter in a frying pan and gently fry the broccoli for 2 minutes.
- Add the sour cream and heat until almost bubbling. Stir in the red onion, smoked salmon and capers.
- Spoon ½ cup of this mixture into the centre of each crepe and fold over to encase.
- Serve with a green salad.
