Smoked salmon crepes

These crepes are filled with delicious smoked salmon, sour cream, broccoli, red onion and capers. They are a perfect light lunch to have when you have guests.

Ingredients

  • 4 crepes

    warmed

  • 1 tsp butter

  • 2 cups broccoli

    finely chopped

  • 300g sour cream

  • ½ red onion

    sliced

  • 100g smoked salmon

  • 2 tbsp capers

    rinsed

Equipment

  • 1 frying pan

Instructions

  1. Heat the butter in a frying pan and gently fry the broccoli for 2 minutes.
  2. Add the sour cream and heat until almost bubbling. Stir in the red onion, smoked salmon and capers.
  3. Spoon ½ cup of this mixture into the centre of each crepe and fold over to encase.
  4. Serve with a green salad.

Notes

Tip
This mixture is really rich and decadent. It’s a special occasion dish and not for every day.
Tip
In this recipe I used smoked salmon pieces for cooking; smoked salmon peices that is packaged for cooking is a lot less expensive.
