Chicken strips

Ingredients
- 2 chicken breast fillets
- 1/3 cup plain flour (gluten free, see notes below)
- 1 garlic clove, crushed
- Salt and pepper to taste
- 2 eggs, lightly beaten
- 2 cups fresh bread crumbs
- ¼ cup oil
Method
Cut chicken into strips approximately 1cm diameter and 10cm long. Toss chicken strips in flour, shake off excess. In a bowl whisk eggs, add garlic, salt and pepper. Cover chicken strips in egg mixture then roll in breadcrumbs.
Heat oil in a deep frypan and fry the chicken strips in two batches until golden brown. DonÛªt walk awayÛÓhot oil is dangerous and the strips brown quickly!
Serve warm as finger food, add to a salad or as part of your main meal
Notes
- I donÛªt shallow or deep fry very often. Very nervous about hot oil in the kitchen with little kids. However, I did make an exception with these chicken strips as they are shallow fried. And they are sensational, so will be making these a regular Û÷sometimes foodÛª!
- To make these gluten-free, I used 4 slices of gluten-free bread to make the breadcrumbs and gluten-free plain flour.
