Chocolate mint ice-cream balls
Ingredients
- 10 scoop low fat vanilla ice cream
- 4 individual Arnotts Mint Slice Mint Slice, crushed
- 80g dark chocolate, finely chopped
Method
Line a baking tray with baking paper and set aside.
Scoop the ice-cream into a medium bowl and allow it to soften slightly. Add the biscuits and mix to combine. Do not overwork as the ice-cream will melt. Cover with some plastic wrap and freeze for 2 hours or until firm.
Use 2 dessertspoons to shape ice-cream into 8 balls. Place on lined baking tray and refreeze for a further hour, or until set.
Meanwhile melt chocolate in a bowl over a saucepan of simmering water. If you wish, add peppermint and stir to combine. Remove from heat and allow the chocolate mixture to cool slightly.
Transfer ice-cream balls to a wire cake rack placed over a separate lined baking tray. Spoon melted chocolate over balls, allowing it to dribble down the sides. Refreeze for a further hour or until chocolate has set.
Serving Suggestions
Note
- Adding some peppermint essence to the melted chocolate will add extra adult flavour.
- Instead of using Mint Slice biscuits you could use choc chip cookies, crushed Maltesers or even a chocolate bar. Just think of your favourite ice-cream flavours for inspiration.
- If making a batch of this ice cream for a kid’s party, get the kids to help. They’ll love picking their flavours, crushing the biscuits and making a mess with melted chocolate.
