Mini olive and feta muffins

These are delicious perfect to pop into the lunchbox for the little people and the grown ups or with a wine after work its a great snack

Ingredients

  • ½ cup pitted olives

    sliced

  • ½ cup feta cheese

    chopped

  • ½ cup spring onion

    finely sliced

  • ¼ cup extra virgin olive oil

  • 1 egg

  • 1 cup milk

  • 1 cup self-raising flour

    sifted

Equipment

  • 1 oven
  • 1 mini muffin tins

Instructions

  1. Pre-heat the oven to 200 degrees C.
  2. Combine all ingredients, stirring briefly until just combined.
  3. Place mixture into mini muffin tins and bake for about 10 minutes or until cooked.
