2 cups self raising flour
1 tsp cinnamon
1 lemon
juice and zest of
½ cup castor sugar
1 egg
100g butter
melted
1 cup milk
1 cup frozen blueberries

- 1 12 cup muffin tin
- 1 muffin patty pans
- 1 bowl
Instructions
- Pre-heat oven to 180C. Line a 12 cup muffin tin with muffin patty pans and set aside.
- Sift flour and cinnamon in a bowl.
- Combine lemon zest, juice, sugar, egg and melted butter together.
- Pour wet ingredients into dry and gently fold to combine.
- Spoon into patty pans and bake for 25-30 minutes.
