Lamb koftas and greek salad

This traditional Greek salad is fantastic when served with lamb koftas. It has a wonderful dressing that comes from the natural juices of the tomatoes and a drizzle of olive oil. It's best served at room temperature so you can appreciate the flavours of all the vegetables

Ingredients

  • 1 Easy lamb koftas

    This is a serving suggestion, referring to a separate recipe.

  • 1 cherry tomatoes

    halved

  • 1 lebanese cucumber

    cubed

  • 1 red onion

    sliced into rings

  • 100g feta cheese

    cubed

  • 100g pitted kalamata olives

  • 1 tsp dried oregano

  • 3 tbsp olive oil

Equipment

  • 1 glass bowl
  • 1 large spoon

Instructions

  1. In a glass bowl place tomatoes and cucumber. Season with salt and pepper.
  2. Add onions, olives, feta and oregano. Turn with a large spoon.
  3. Drizzle olive oil and mix together to coat. Leave to stand for 15 mins and mix to cover in dressing.
  4. Serve at room temperature.

Notes

Tip
This is a great summer salad and I eat it during winter when I am sick of casseroles.
Tip
It makes a great quick meal if you buy some ready-made lamb skewers and throw them on the grill.
Variation
Some cooks like to add a little lemon juice to the dressing but I prefer it without.
