Beef and rice croquettes with tomato onion gravy

Use up leftover rice with this tasty dinner idea. The tomato and onion gravy is to die for and lovely served with mashed potatoes and steamed veggies.

Ingredients

  • 500g lean beef mince

  • 1½ cups cooked rice

  • 2 eggs

  • 1 tbsp sweet paprika

  • 2 tbsp Dijon mustard

  • 1 clove garlic

    minced or finely chopped

  • 0.5 onion

    grated

  • 0.5 carrot

    grated and/or peas or corn (optional)

  • 2 tbsp olive oil

    For gravy

  • 1 onion

    thinly sliced, for gravy

  • 420g tin diced tomatoes

    For gravy

  • Salt and pepper

    For gravy

Equipment

  • 1 Baking tray
  • 1 Mixing bowl
  • 1 Deep fry pan

Instructions

  1. Preheat oven to 200C. Spray baking tray with canola spray.
  2. Mix all ingredients except the gravy ingredients in a bowl and mould into croquette (i.e. sausage-like) forms with your hands and place on the baking tray.
  3. Bake for 15 minutes, then turn over and bake for a further 10 minutes.
  4. Whilst croquettes are baking, prepare the gravy. Heat oil in a deep fry pan, add onions and fry until soft.
  5. Add tomatoes and fill the can with water, add to tomatoes and add salt and pepper. Simmer.
  6. When croquettes are baked, add them to the gravy and simmer for another 10 minutes, ensuring you turn the croquettes to get them covered by the gravy.
  7. Serve with mash or scalloped tomatoes and greens.

Notes

Tip
If your kids like sausages, they will love these croquettes and even better, you can hide all manner of veggies in them.
