Christmas tree frittata

Ingredients

  • 6 eggs
  • 3/4 cup (180ml) pouring cream
  • 1 large potato, peeled, finely diced, par-boiled
  • 1/2 medium onion, finely diced
  • 3 cups (100g) fresh baby spinach, finely shredded
  • 1/3 cup (35g) pizza cheese blend 
  • 10 sun-dried tomatoes, sliced into ribbons

Method

Pre-heat oven to 190°C (170°C fan-forced). Grease and line a shallow baking or slice tray.
 
In a large bowl, whisk together all the ingredients, except the sun-dried tomatoes, then pour into baking tray.
 
Arrange the sun-dried tomatoes in neat lines, diagonally across the entire tray.
 
Bake for 35-40 minutes, or until a skewer inserted into the centre of the frittata comes out clean.
 
Using a sharp knife, slice into triangles (that resemble Christmas trees) then arrange on a plate and use tomato sauce to decorate.

Note

  • Buy pre-grated cheese from the supermarket, or you can use whichever hard cheese you have on hand.
  • For extra flavour, try adding diced bacon or chorizo to the mixture. Or use frozen peas or corn as decorative baubles!
