Promotion for Marcel’s Pancakes

Here’s an impressive way to serve up fresh fruit during summer! This recipe combines Barker’s deliciously fruity Peach, Mango & Passionfruit Compote with creamy mascarpone, which is generously layered between Marcel’s soft and fluffy pancakes, then topped off with in-season fresh fruit.

It’s a delicious, quick and budget-friendly breakfast or dessert, made super easy with Marcel’s Happy Pancakes.

Ingredients
  

  • ¾ cup mascarpone 
  • ¾ cup Barker's Peach, Mango & Passionfruit Compote
  • 2 packets Marcel's Happy Pancakes
  • Handful raspberries 
  • Handful blueberries
  • Mint leaves to garnish (optional)

Instructions
 

  • Put the mascarpone and compote into a small bowl and mix well to combine.
  • Arrange a pancake on each of the plates. Top the pancakes with the compote mixture. Repeat this two more times until you have a stack of three pancakes with the compote mixture also on the top layer.
  • Drizzle a little extra compote over the top of the stack, then arrange the fruit on top, followed by some mint leaves if desired.
  • Serve immediately.
