Apricot and macadamia bliss balls
Makes 12-15 balls
Ingredients
- 300g dried apricots
- 110g toasted unsalted macadamias
- 1 tbsp coconut oil
- pinch of cinnamon
- pinch of salt
- 1 tbsp golden syrup
Method
Step 1. Gather all ingredients.
Step 2. Combine the apricots, nuts, oil, cinnamon, salt and syrup in a food processor or blender. Blitz until well combined.
Step 3. Roll one tablespoon of the mixture into a ball and set aside on a plate or tray lined with baking paper.
Step 4. Repeat with the rest of the mixture then place in the fridge or freezer to firm up. Keep in the former for one week and the latter for up to three months.
Serving Suggestions
Note
- You could toss these balls in some toasted dessicated coconut too.
- Swap half of the nuts with almonds or hazlenuts for a slightly more complex flavour.
- Use honey or maple syrup instead of the golden syrup.
