Coconut cookie nests

This take on a coconut macaroon uses food colouring to make pretty Easter nests that are just right for holding mini chocolate eggs. A lovely sweet treat idea that will look delightful as an edible Easter decoration.

Ingredients

  • 2 large egg whites
  • 2 cups shredded sweetened coconut
  • 1/3 cup caster sugar
  • 2 tablespoons plain flour
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 4 colors of food coloring (optional)
  • 12 chocolate eggs, unwrapped

Method

Preheat oven to 160C. Lightly grease and flour baking tray.

In medium bowl, whisk egg whites until frothy. Stir in coconut, sugar, flour, vanilla extract and salt until well blended.

Divide coconut mixture into 4 bowls. Add 1 to 2 drops different color food coloring to each bowl; mix until colors are dispersed evenly.

Tablespoon 12 mounds onto tray 3cm apart. Press centers in slightly to form nests.

Bake for 20-22 minutes or until set and lightly golden brown.

Transfer nests and baking sheet to wire rack & cool for 10 minutes. Place 1 chocolate egg in each nest before serving.
