Balsamic glaze

A versatile accompaniament to almost anything - drizzle over chicken, fish, roast veges and even fruit (especially strawberries) for a taste sensation.

Ingredients

  • 2 cups balsamic vinegar

  • ½ cup brown sugar

  • ¼ cup maple syrup

Equipment

  • 1 small saucepan
  • 1 whisk

Instructions

  1. In a small saucepan, place all the ingredients and whisk together.
  2. Bring to the boil and simmer until you have reduced the liquid by half.
  3. Store in the refrigerator.

Notes

Tip
Near the end of the reduction process, you’ll need to be careful it doesn’t burn.
Variation
If you are a purist and have plenty of time, use just the balsamic vinegar and reduce it by two-thirds. Adding sugar and maple syrup is just a way of hurrying up the caramelisation process.
Storage
Store in the refrigerator.
