    Change up the lunch box fillers with this healthier version of a muesli bar using Healtheries Fun Puffs.

    Lunchbox Slice with Apricots

    Course Lunch

    Ingredients
      

    • 4 cups Healtheries Fun Puffs
    • 1/2 cup Dessicated coconut
    • 1 tablespoon Chia seeds
    • 1.5 cups Dried apricots chopped
    • 1/2 cup Peanut butter
    • 100 grams Butter
    • 4 tablespoons Honey

    Instructions
     

    • Line a slice tin with baking paper (allow overhang to make it easier to get the slice out of the tin)
    • Mix the Healtheries Fun Puffs, coconut, chia, and dried apricots in a bowl
    • Melt the peanut butter, honey and butter in a saucepan over a medium heat until just about to boil
    • Add the peanut butter to the Fun Puffs mixture and stir to combine
    • Quickly transfer the mixture to the slice tin and press it down firmly with the back of a spoon
    • Refrigerate the slice overnight to firm up then slice into bars
