Change up the lunch box fillers with this healthier version of a muesli bar using Healtheries Fun Puffs.

Ingredients

  • 4 cups Healtheries Fun Puffs

  • 1/2 cup Dessicated coconut

  • 1 tablespoon Chia seeds

  • 1.5 cups Dried apricots

    chopped

  • 1/2 cup Peanut butter

  • 100 grams Butter

  • 4 tablespoons Honey

Instructions

  1. Line a slice tin with baking paper (allow overhang to make it easier to get the slice out of the tin)
  2. Mix the Healtheries Fun Puffs, coconut, chia, and dried apricots in a bowl
  3. Melt the peanut butter, honey and butter in a saucepan over a medium heat until just about to boil
  4. Add the peanut butter to the Fun Puffs mixture and stir to combine
  5. Quickly transfer the mixture to the slice tin and press it down firmly with the back of a spoon
  6. Refrigerate the slice overnight to firm up then slice into bars
