Spicy pear crumble
Ingredients
- 5 ripe pears
- 2 tsp lemon juice
- ½ tsp vanilla extract
- 1½ tsp cornflour
- 2 tbsp brown sugar
Topping
- 1/3 cup wholemeal flour
- 1/2 cup rolled oats
- 2 tbsp brown sugar
- 6 ginger biscuits
- pinch of cinnamon
- 50g butter, melted
Method
Heat oven to 190°C (170°C fan-forced).
Peel pears, cut in half, remove cores and dice.
Combine lemon juice, vanilla extract, cornflour and sugar with pears in a bowl.
Pulse dry topping ingredients in a food processor until finely chopped. Add melted butter and pulse once more.
Pour pears into a baking dish. Top with crumble mixture and bake for approx 20 minutes, until crispy.
Serve with ice-cream.

Serving Suggestions
Note
- The cornflour will thicken up the pear juices as the crumble cooks.
