    Vegetarian chilli

    Ingredients

    • 1 onion
    • 1 pumpkin
    • chilli flakes
    • ground coriander
    • cumin
    • 400g tin kidney beans
    • 400g tin chick peas
    • 400g tin corn
    • 400g tin of chopped tomatoes
    • 1 cup vegetable stock

    Method

    Chop onion and heat until translucent.

    Add a good sprinkle of coriander and cumin, add vegetable stock, cubed pumpkin, kidney beans, chick peas and tomatoes. Small sprinkle of chilli flakes.

    Cook until pumpkin is soft then heat corn through.

    Serving Suggestions

    Serve with a dollop of sour cream and rice.
