    Zucchini, Tuna, Orange & Rice Salad

    Ingredients

    • 2 zucchini, sliced
    • 150g green beans, cut into thirds
    • 3 cups cooked brown rice
    • 2 x 185g cans tuna, drained
    • 2 tsp parsley

    Dressing

    • 2 tbsp fresh orange juice
    • 1 tsp finely grated orange rind
    • 2 tbsp olive oil
    • 2 tsp white wine vinegar
    • Salt and pepper

    Method

    To make the dressing, whisk together dressing ingredients, set aside.

    Boil or steam the zucchini and beans for 2 minutes. Drain and set aside.

    Mix tuna, rice, beans and zucchini together, add the dressing and toss.
