    Tortilla stacks

    Ingredients

    Gluten-free, nut-free, egg-free

    • 4 corn tortillas (gluten-free)
    • 2 tablespoons hummus
    • å_ cup grated tasty cheese
    • å_ cup shaved ham
    • 1 teaspoon vegetable oil

    Method

    Spread two tortillas with hummus, top with cheese and ham and then remaining two tortillas.

    Heat oil in a non-stick pan over medium heat, cook tortillas stacks one at a time until crispy and golden on both sides and cheese has melted.

    Slice into quarters and stack to serve.

    Serving Suggestions

    Note

    • These stay hot for quite a while, so you could even make them before school pick up and by the time you are home they will be at an edible temperature.
    • You can hide all manner of things in these ‰ÛÒ try pureed cannellini beans instead of the hummus, chopped chicken or pureed pumpkin mixed in with the cheese.
