Banana and walnut bread

Try this simple and delicious Banana and Walnut Bread recipe. Fast and easy to prepare with less cooking time than traditional Banana Bread.

Ingredients

  • 2 cups plain flour

    sifted

  • 3.7ml bi-carbonate soda

  • ¾ cup castor sugar

  • 1 cup walnuts

    chopped

  • 85g butter

    melted

  • ⅓ cup sour cream

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup banana

    mashed

  • 1 loaf pan
  • 1 baking paper
  • 1 bowl

Instructions

  1. Preheat oven to 180°C. Line a loaf pan with baking paper and set aside.
  2. In a bowl, mix sifted flour, bi-carbonate soda and sugar.
  3. In a separate bowl, beat eggs, add sour cream and mix in vanilla, banana and butter.
  4. Pour the wet mix into the dry mix bowl and add walnuts. Mix gently until just combined and pour into loaf pan.
  5. Bake for 45 mins.

Notes

Variation
My son is not a fan of walnuts so I often bake a loaf without.
Storage
This recipe freezes very well. I bake, slice and freeze this, so the kids can have it for school lunches.
