Best-ever guacamole recipe

I discovered the secret to great guacamole at a restaurant in New York. The waiter made the guacamole at our table, mashing it together with a mortar and pestle. He used lots of salt too ... salt makes bland guacamole fabulous!

Ingredients

  • 2 ripe avocados

  • 1/4 red onion

    minced

  • to taste Tabasco

  • to taste lemon juice

  • to taste salt

Equipment

  • 1 Bowl

Instructions

  1. Mash the avocados, stir in the minced red onion and Tabasco.
  2. Add a few splashes of lemon juice and a few grinds of sea salt. Taste.
  3. Add more lemon juice or sea salt until the desired level of guacamole nirvana is achieved.
  4. Serve with a huge bowl of corn chips.

Notes

Variation
Also delish with diced, seeded tomato and fresh coriander leaves stirred through.
Storage
Stop left avocado going brown by leaving the stone in and covering with a damp piece of kitchen roll. Seal in a ziplock bag and store in the fridge.
