Pumpkin fritters
Ingredients
- 2 cups pumpkin – cooked and mashed
- 1/4 teaspoon salt
- 2 tablespoons flour
- 1 egg, beaten
- 1 teaspoon baking powder
- butter or oil
- sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)
Method
Mix pumpkin, egg, flour, baking powder and salt together.
Heat butter in a frying pan and drop in spoonfuls of mixture.
Fry on both sides until golden.
Serve hot

Sprinkle with cinnamon sugar
