    Pumpkin fritters

    Serves:

     

    Ingredients

    • 2 cups pumpkin – cooked and mashed
    • 1/4 teaspoon salt
    • 2 tablespoons flour
    • 1 egg, beaten
    • 1 teaspoon baking powder
    • butter or oil
    • sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)

    Method

    Mix pumpkin, egg, flour, baking powder and salt together.

    Heat butter in a frying pan and drop in spoonfuls of mixture.

    Fry on both sides until golden.

    Serve hot

    Serving Suggestions

    Sprinkle with cinnamon sugar
