Smoked salmon crepes
Ingredients
- 4 crepes, warmed
- 1 tsp butter
- 2 cup finely chopped broccoli
- 300g sour cream
- ½ red onion, sliced
- 100g smoked salmon
- 2 tbsp capers, rinsed
Method
Heat the butter in a frying pan and gently fry the broccoli for 2 minutes.
Add the sour cream and heat until almost bubbling. Stir in the red onion, smoked salmon and capers.
Spoon ½ cup of this mixture into the centre of each crepe and fold over to encase.
Serve with a green salad.
Notes:
This mixture is really rich and decadent. It’s a special occasion dish and not for every day.
In this recipe I used smoked salmon pieces for cooking; smoked salmon peices that is packaged for cooking is a lot less expensive.
