    Coconut macaroons

    Ingredients

    • 2 cups desiccated coconut
    • half a cup caster sugar
    • 2 egg whites

    Method

    Preheat oven to 180C. Line a baking tray with baking paper. Place coconut, sugar and egg whites in a bowl, mix to combine. Roll 2 teaspoonsful of mixture into balls and place on baking tray.

    Bake for 10 minutes until golden. Cool on a tray or wire rack.

     

    Notes:

    • These are my new favourite! How easy to make! Gluten-free, nut-free and relatively low fat (don‰t think about the coconut).
    • I made small (2 teaspoonfuls) and larger ones (2 tablespoonfuls) to cater to the varying appetites of my family!
