Peach melba yoghurt layers

    Serves 4-6

    Ingredients:

    • 400g can sliced peaches, in juice
    • 1½ cups of raspberries – fresh or frozen (defrosted)
    • 500g natural yoghurt

    Recipe method:

    Drain the peaches, keeping 1-2 tbsp of the juice and place into a Kenwood Triblade jug.

    Blend peaches using Kenwood Triblade stick until smooth. Set aside.

    Clean the Triblade jug and then place the raspberries into it and blend them into to a puree with the Triblade stick.

    Layer the yoghurt with the peach and raspberry purees in a tall glass dish or make swirls with the purees into the yoghurt for kids.

    Add nuts/seeds/muesli on top or through the layers if you like!

      We have so many raspberries growing in our garden that we are running out of ideas of what to do with them, this is perfect, thank you!

      My uncle made these at our family Christmas this year (apparently it’s a family recipe, although I can’t recall ever having them before) . His version had cream, I’ve cream and some kind of alcohol in the raspberry mix and so I wasn’t really a fan. These look much nicer and could be shared with the kids too 🙂

      This looks delicious and would be a healthy summer treat for the whole family. would be great adding almonds.

      This sounds super tasty! Love making fruit purees for dessert sauces or layering.

      Yum, yum, yum! My kind of summer recipe, 3 ingredients and whizz it all up 🙂 I often make ice blocks using similar ingredients – I usually add a banana in to thicken it a wee bit. Just get cheap $2 ice block maker trays from good old KMart – great for when you get home from work on a hot day 🙂

      Ooh what a delicious recipe! We live close to a berry farm and we were planning to pick raspberries for jam next weekend. Must make sure we pick some extras to give this recipe a go too 🙂
