Stuffed Crusty Rolls and Mince

This budget-friendly recipe of stuffed crusty rolls with a savoury mince mixture, then topped with melted cheese will have the kids coming back for more.

Ingredients

  • 500g mince

  • 1 capsicum

    chopped

  • 1 onion

    chopped

  • 1 tomatoes

    crushed

  • 3 cups mushrooms

    sliced

  • 1 zucchini

    chopped

  • 1 cup grated cheese

  • 6-8 crusty bread rolls

  • 1 tbsp cream of mushroom soup mix

    single serving

Equipment

  • 1 Large pan or skillet
  • 1 Oven
  • 1 Baking sheet

Instructions

  1. Brown mince then add the chopped onion. Cook for a few minutes.
  2. Add chopped capsicum, mushroom and zucchini.
  3. After a few minutes, add the tin of crushed tomatoes, cream of mushroom soup mix and seasoning to taste.
  4. If the mixture appears to be too dry you can add some tomato paste or maybe one crushed tomato. Simmer on low heat to mix in the flavours for 20 minutes.
  5. Once mince is cooked, spoon into bread rolls, top with grated cheese and put into oven until cheese is melted and bread rolls are nice and crisp.

Notes

Tip
If the mixture appears to be too dry you can add some tomato paste or maybe one crushed tomato.
