    Tuna puffs

    Serves:

     

    Ingredients

    • 425g can tuna in brine, drained and flaked
    • 1 small onion, grated
    • 1 and a half cups fresh white breadcrumbs
    • 125ml (half cup) milk
    • 1 tablespoon lemon juice
    • 1 tablespoon chopped fresh parsley
    • freshly ground pepper
    • 3 egg whites

    Method

    Grease 12 muffin tins.

    Combine tuna, onion, breadcrumbs, milk, lemon juice, parsley and pepper in a large bowl.

    In a medium bowl, beat egg whites until stiff with electric mixer.

    Stir a tablespoon of beaten egg white into tuna mixture to soften, fold in remaining egg white.

    Divide mixture between muffin tins bake at 180C for about 30 minutes.

    Recipe hint: Tuna mixture should almost fill muffin tins before baking.
