Mac and cheese

Enjoy a comforting bowl of good old Mac and cheese to fill your tum and warm your cockles. This recipe includes green beans for extra fibre and parmesan to boost the flavour.

Ingredients

  • 400g macaroni

  • ¾ cup green beans

    cut into 1 inch pieces

  • 50g butter

  • 2 tbsp flour

  • 2 cups milk

  • 1 tbsp Dijon mustard

  • 1 cup tasty cheese

    grated

  • ½ cup parmesan cheese

    grated

Equipment

  • 1 pot
  • 1 saucepan
  • 1 whisk
  • 1 strainer

Instructions

  1. Bring a pot of salted water to the boil and cook pasta following packet directions. Halfway through cooking the pasta, add green beans to the cooking water.
  2. Meanwhile, melt butter in a medium saucepan.
  3. Once butter is melted add flour, while constantly stirring.
  4. Gradually add milk and begin whisking to prevent lumps.
  5. Once all the milk is added, reduce heat and simmer for 3-4 minutes.
  6. Add mustard and adjust seasoning then remove from the heat.
  7. Strain pasta and beans and add to the sauce followed by the cheeses.
  8. Fold to combine and serve.

Notes

Tip
Adding more than one cheese makes this a little more interesting for kids and adults alike.
Tip
Adding a touch of mustard introduces your kids to another mild flavour they might not otherwise be willing to try.
