Fresh mango with raspberry yoghurt

Perfect for a summer dessert or even afternoon snack, this mango topped with raspberry yoghurt tastes amazing! It's so fresh and light and, even better, healthy!

Fresh mango with raspberry yoghurt

Serves:

Ingredients

  • 2 mangoes
  • 1 cup vanilla yoghurt
  • half a cup fresh raspberries
  • Extra raspberries to serve

Method

Slice the cheeks from the mango, score into slices lengthways and then cut the slices away from the skin. Arrange the slices in bowls. Warm the raspberries in the microwave for 10-15 seconds, mash with a fork and then stir through the yoghurt.

Serve the mango with the fresh raspberry yoghurt and extra raspberries. Summer dessert heaven.

Notes:

 

  • If the kids dont like it, tough! All the more wonderful fruit for you. I guess you could give them the plain yoghurt.
