Mini rock cakes

These rock cakes have a lovely crunchy top and are soft in the middle they are perfect for an afternoon snack or to pop in the lunchbox

Ingredients

  • 1½ cups self-raising flour

  • 2 tbsp custard powder

  • 0.5 tsp mixed spice

  • 100g butter

    chopped

  • ⅓ cup caster sugar

  • ½ cup sultanas

  • 1 egg

    lightly beaten

  • 315ml milk

    use enough to make a moist dough

  • 2 tbsp caster sugar

    extra, for sprinkling

  • Butter

    to serve

Equipment

  • 1 Oven
  • 1 Large bowl
  • 1 Sifter
  • 1 Oven tray
  • 1 Wire racks

Instructions

  1. Preheat oven to 190C.
  2. Sift flour, custard powder and mixed spice into a large bowl.
  3. Rub in butter until the mixture resembles fine breadcrumbs. Stir in sugar and sultanas.
  4. Make a well in the centre. Add egg and enough milk to make a moist dough with a firm consistency.
  5. Spoon level tablespoons of mixture, about 5cm apart on to lightly greased oven tray.
  6. Sprinkle evenly with extra sugar.
  7. Place in oven and cook for approx. 8 minutes, or until lightly brown and fluffy. Loosen cakes, cool on wire racks.
  8. Serve warm or cold with extra butter.

Notes

Tip
Make sure you give the cakes a good sprinkling of sugar as it creates a lovely taste to bite into on top.
Variation
If you are not a big fan of mixed spice, you can leave it and the rock cakes will still taste delicious!
