Weet-bix slice

Always popular and so easy to make, this Weet-Bix slice recipe is a great way to involve the kids in the kitchen. Let them crush up the Weet-Bix for the base and pour on the icing after it’s baked.

Ingredients

  • Olive oil spray

  • 1 cup self raising flour

  • 4 crushed Weet-Bix

  • ½ cup brown sugar

  • ½ cup sultanas or choc-chips

  • 60g unsalted butter

  • 1 tbsp golden syrup

  • 2 tbsp milk

  • 1 cup icing sugar

  • 1 tbsp lemon juice

  • 1 tbsp milk

Equipment

  • 1 26cm x 16cm slab tin
  • 1 bowl
  • 1 small saucepan

Instructions

  1. Preheat oven to 180C. Spray a 26cm x 16cm slab tin with olive oil spray.
  2. Combine flour, crushed weet-bix, sultanas (or choc chips) and brown sugar in a bowl. Melt butter, golden syrup and milk in a small saucepan.
  3. Pour butter mixture into dry ingredients and mix well. Press mixture into tin. Bake 20-25 minutes until browned.
  4. To prepare icing, mix icing, lemon juice and milk together in a small bowl until smooth.
  5. Pour icing over the slice while it is still hot, then cut into slices when cold.

Variation
Use choc-chips instead of sultanas.
