Balsamic glaze

    Ingredients:

    • 2 cups balsamic vinegar
    • ½ cup brown sugar
    • ¼ cup maple syrup

    Method:

    In a small saucepan, place all the ingredients and whisk together. Bring to the boil and simmer until you have reduced the liquid by half.  Store in the refrigerator.

    Notes:

    • If you are a purist and have plenty of time, use just the balsamic vinegar and reduce it by two-thirds. Adding sugar and maple syrup is just a way of hurrying up the caramelisation process.
    • Near the end of the reduction process, you’ll need to be careful it doesn’t burn.
