Pancakes with berries and yoghurt

It doesn't get much better than pancakes for breakfast, and these pancakes are no exception. Topped with fresh berries and yoghurt, no-one will say no to these! Cover with melted chocolate instead of the yoghurt for a yummy dessert.

Ingredients

  • 1 buttermilk pancakes

    from a separate recipe

  • 1 blueberries

    washed

  • vanilla yoghurt or cream or icecream

    to serve

  • 1 Plate
  • 1 Saucepan

Instructions

  1. Cook pancakes as per buttermilk pancake recipe.
  2. For each serve, place one pancake on a plate, scatter with a few berries, top with another pancake, scatter with more berries, then top with a third pancake.
  3. Spoon a good dollop of yoghurt, cream or icecream on top and scatter with more berries. Enjoy!

Notes

Tip
I find that two pancakes are enough for me, but the stack of three does look impressive!
Variation
A warm chocolate sauce is also superb with this combination, particularly if you are serving with cream or icecream.
Variation
Use a bought good quality chocolate sauce or make your own by melting 100g dark chocolate with 100mL thin cream in a saucepan over low heat.
