Veggies with noodles

Make this simple midweek meal when you want something quick and healthy on the table quick sticks. Kids love noodles so combine them with child-friendly veggies such as carrots and broccoli for a nutritious dinner.

Ingredients

  • 1 tbsp oil

  • 4 bacon

    chopped

  • 1 onion

    diced

  • 1 small head broccoli

    cut into florets

  • 1 carrot

    peeled and thinly sliced

  • 1 cup peas

  • 1 cup corn

  • 1 cup green beans

    sliced

  • 1 litre chicken stock

  • 2 noodles

  • to taste seasoning

    seasoning packet, garlic powder, or curry powder

  • 1 frying pan

Instructions

  1. Heat a tablespoon of oil in a frying pan. Add the onion and bacon and saute for a few minutes, until cooked.
  2. Add broccoli, carrot slices, peas, corn, and green beans into the pan.
  3. Add chicken stock, simmer the veggies and bacon in stock until cooked then add noodles and seasoning and cook further until noodles are soft.

Notes

Tip
Cut veggies small so they cook at the same rate as the noodles.
Variation
Use curry powder for a spicier kick.
Variation
Substitute bacon with tofu for a vegetarian option (use vegetable stock).
Storage
Store in an airtight container in the fridge for up to 2 days.
