Coconut chocolate chip cookies




  • 1 1/2 cups brown sugar
  • 200g soft butter (not melted)
  • 2 eggs
  • 2 cups plain flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups coconut
  • 1 1/2 cups chocolate chips
  • 2 teaspoons vanilla essence


Beat butter and brown sugar together until creamy.

Beat in eggs and vanilla essence.

When the ingredients are mixed together, add flour, baking soda and salt. Stir in coconut and chocolate chips.

Bake at 160C for 20 minutes or until brownish at the edges. Let cool for a minute or two. Serve warm.
