Chicken strips

I don’t shallow or deep fry very often. However, I did make an exception with these chicken strips as they are shallow fried. And they are sensational, so will be making these a regular ‘sometimes food’!

Messy cheese pies

These little quiches are a big hit with my kids because the flaky (messy) pastry appeals to their taste buds and sense of chaos. I like them because you can hide egg, corn and other yellowish vegetables (pureed pumpkin, carrot, yellow zucchini etc)

Chicken jambalaya

Chicken, pork, sausage and veggies, this colourful Jamaican rice dish is one-pot and full of flavour. A great one to make when there's a hungry crowd to feed.

Chicken and pumpkin casserole

This recipe is so tasty that I want to make it again and again. The apple cider vinegar combined with the taragon and chicken is a really delicious combination. Golden chunks of pumpkin swim in its self-made gravy and it's a perfect meal served with some steamed green beans.

Chicken wraps

These chicken wraps are the perfect midweek meal. They are quick to prepare and packed full of healthy salad. Cooking the chicken with just a spray of canola oil makes them relatively low in fat as well. You can wrap these in foil and take them on a picnic or wrap a spare for tomorrow's lunch.

These delicious chicken parcels are perfect for the lunchbox or a picnic or a quick after school snack. The kids and grown ups will love them

Zigzag chicken skewers

The combination of chicken, haloumi and red capsicum is a great way to jazz up ‘chicken on a stick’. These zigzag chicken skewers can be made a few hours in advance. Great for dinner or even pop them on the BBQ.

Chicken and corn pie

Chicken and corn are a classic combination and together they make the perfect pie filling. This recipe makes individual pies with a puff pastry lid but you could make one big pie for the whole family if you wished.
