Grown Up Gingerbread

This gingerbread recipe is great for the adults. The flavours make for a delicious dessert and goes perfectly with whipped cream or ice cream

Ingredients

  • 125g unsalted butter

    softened

  • ½ cup brown sugar

  • 1 cup golden syrup

  • 3 eggs

  • 450g plain flour

  • 1 tsp bicarb soda

  • 2 tbsp ground ginger

  • ½ tbsp ground cinnamon

  • 1 tsp ground nutmeg

  • ¾ cup buttermilk

  • ¼ cup fresh orange juice

  • 1 Oven
  • 1 30cm x 22cm tin
  • 1 Baking paper
  • 1 Large bowl
  • 1 Sifter
  • 1 Wire rack
  • 1 Electric mixer

Instructions

  1. Preheat oven to 180C. Grease a 4cm deep 30cm x 22 cm tin and line it with baking paper.
  2. Cream butter and sugar in a large bowl. Stir in golden syrup, then beat in eggs, one at a time.
  3. Sift flour with bicarb soda and spice and set aside. Combine buttermilk and orange juice.
  4. Beat flour and buttermilk alternately into creamed mixture, a third at a time, finishing with the flour.
  5. Pour into prepared tin and bake for 50 minutes or until cake tests clean.
  6. Cool on a wire rack before turning out.
