A healthy and filling protein packed breakfast is just five minutes away with this frittata that’s cooked in a mug. Change up the ingredients to suit your mood or use whatever veggies are in the fridge.

Ingredients

  • 2 large eggs

  • 1 pinch salt & pepper

  • 1/2 cup baby spinach

    chopped

  • 2 tbsp cheddar cheese

  • 1 tbsp spring onion

  • 1 large mug
  • 1 whisk
  • 1 microwave

Instructions

  1. Grease a large mug with non-stick cooking spray or oil; in the mug whisk together the eggs, salt and pepper. Stir in spinach, cheese and spring onions.
  2. Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.

Notes

TIP: Top with diced avocado and fresh salsa for a tasty garnish.
