Ingredients
2 tsp olive oil
(10ml)
1 small onion
finely chopped
1 small red capsicum
finely chopped
1 clove garlic
minced
1 pinch salt
1 diced tomatoes
(400g)
½ cup vegetable stock
(125ml)
1 tbsp white vinegar
(20ml)
2 tsp cumin
2 tsp smokey paprika
¼ tsp chilli powder
optional
1 tsp sugar
Equipment
- 1 small saucepan
- 1 blender or food processor
Instructions
- Heat oil in a small saucepan and add onion, capsicum and garlic with a pinch of salt.
- Cook on low for 8 minutes until soft.
- Add remaining ingredients and bring to the boil.
- Reduce heat and simmer gently for 5 minutes.
- Leave it as is or blend/process for a smooth sauce.
