Lunch box rice noodle salad

Lunch box salads are the perfect solution if you are sick of sandwiches. This recipe has a noodle base with an Asian inspired dressing.

Ingredients

  • 1 carrot

    julienned

  • 1 small cucumber

    sliced into wedges

  • 1 handful snow peas

    trimmed

  • 1 handful mixed sprouts

  • 1 cup rice noodles

    cooked and chopped into small lengths

  • 40ml fish sauce

    (2 tbsp)

  • ¼ cup lime juice

    (1/4 cup)

  • 2 tbsp caster sugar

  • 1 clove garlic

    crushed

Equipment

  • 1 bowl
  • 1 lunch boxes

Instructions

  1. Combine the salad ingredients in one large bowl.
  2. Divide this among your lunch boxes and reserve the rest to stash in the fridge.
  3. Combine dressing ingredients and mix well.
  4. Pack the salad with the salad dressing separately.

Notes

Variation
Add tuna, shredded chicken, or poached salmon for protein.
