Slow cooked beef

Enjoy this beef casserole cooked in a slow cooker. Using mushrooms, bacon, beef and a splash of red wine, it is the tastiest - and easiest - winter dinner you can serve your family.

Ingredients

  • 1kg gravy beef or round steak

    cubed

  • 2 bacon

    chopped

  • 2 onions

    finely sliced

  • 2 potatoes

    chopped into 1cm dice

  • 10 button mushrooms

    halved

  • ½ cup good quality beef stock

    (125mL)

  • ½ cup red wine

    (125mL)

Equipment

  • 1 Slow Cooker (Crock Pot)
  • 1 Stock Pot
  • 1 Casserole Dish

Instructions

  1. Place potatoes, onions and mushrooms in the crock pot.
  2. Add beef, bacon, stock and red wine on top of the vegetables.
  3. Turn the crock pot onto the low setting and let it cook for 8-10 hours. You do not need to take the lid off or stir it.

Notes

Tip
If you have too much sauce, at about the 9 hour mark, take the lid off, turn the heat to high and let it boil away to reduce the sauce.
Tip
To thicken the sauce further, mix a tablespoon of cornflour with a tablespoon of cold water and stir it in.

Ensure potato chunks are diced to about 1cm so they cook through properly.

Variation
If you don't have a slow cooker, you can use a stock pot or casserole dish.
Variation
For the stock pot method: Increase the wine to 1.5 cups and the stock to 1 cup. Bring all ingredients to the boil then reduce heat to low, cover and simmer for 1.5 hours or until beef is tender.
Variation
For the casserole dish method: Increase the wine to 1.5 cups and the stock to 1 cup. Preheat oven to 180°C, cover the dish and bake for 1.5 hours.
