Anzac slice

Anzac biscuits are a favourite with kids so try this recipe that takes the classic recipe and turns it into a slice. Using the same delicious oats, coconut and golden syrup, it's perfect for lunch boxes and afternoon tea.

Ingredients

  • 1 cup rolled oats

    (90g)

  • 1 cup brown sugar

    (220g)

  • ¾ cup coconut

    (65g)

  • ½ cup plain flour

    (110g)

  • 125g butter

  • 2 tblsp golden syrup

  • ¼ cup shredded coconut

    (15g)

Equipment

  • 1 18cm x 28cm slice pan
  • 1 large bowl
  • 1 small saucepan
  • 1 glass

Instructions

  1. Preheat oven to 180C. Lightly grease an 18cm x 28cm slice pan. In a large bowl, combine oats, sugar, coconut and sifted flours.
  2. Heat butter and golden syrup in a small saucepan on low heat for 1-2 minutes, until butter has melted and mixture is well combined.
  3. Make a well in centre of dry ingredients. Add butter mixture and combine well.
  4. Press firmly into prepared pan using base of a glass. Sprinkle with coconut.
  5. Bake for 20-25 minutes, until golden. Sprinkle with coconut.
  6. Cool completly in pan. Cut into squares to serve.

Notes

Tip
I sprinkle the shredded coconut on after baking. If you sprinkle it on before it turns brown and blends into the slice.
Tip
You need to keep an eye on this slice as it can burn very quickly.
