Ingredients
1 cup pitted dates
¼ cup sunflower seeds
2 tbsp coconut oil
3 tbsp chia seeds
2 tbsp dark cocoa powder
1 tsp vanilla extract
½ cup desiccated coconut
for rolling
Equipment
- 1 food processor
- 1 bowl
Instructions
- Place all the ingredients, apart from the coconut, into a food processor and whizz for 45 seconds, or until the mixture looks like small, dark breadcrumbs.
- Remove mixture from processor and empty into a bowl.
- Scoop up little handfuls of the mix, squeeze together and roll into small balls. Then roll each ball through the desiccated coconut.
- Serve immediately or store in an airtight container in the fridge for up to 10 days.
